Ilan’s Raw Chocolate, which was founded in 2015 by Ilan and Merav Rosenblit in a kibbutz near Nazareth, in northern Israel, is also handcrafted in Cincinnati and is available weekly at local farmer’s markets and at tastings hosted by a variety of businesses in the Tri-State area.
Ilan's Raw Chocolate uses high quality organic, vegan, and preservative-free ingredients, and hand-tempers their chocolates in small batches to produce a unique taste and soft texture. Their Criollo cacao paste and cacao butter are imported from an organic, fair-trade farm in the Amazon in Peru. They seek to meet the needs of health conscious dessert lovers and the adventurous tastes of the modern day “foodie” with an innovative approach to raw chocolate.
In 2018, Cebastian Hilton, now current partner of the US production of Ilan’s Raw Chocolate, received in-depth training in 2018 to learn the complex and secret method of production from Ilan and his wife, Merav. Since then, the US team has been hand-tempering chocolates in small batches, just like Ilan, from high quality, naturally healthy ingredients. Ilan’s Raw Chocolate is also Kosher certified under Cincinnati Kosher.
